Tropical Paradise Punch

A refreshing blend of tropical fruits and coconut, this vegan mocktail will transport you to a beachside paradise with every sip!

Ingredients

  • 2 cups fresh pineapple chunks
  • 1 ripe mango peeled and chopped
  • 1 cup coconut water
  • 1/2 cup fresh orange juice
  • 1/4 cup lime juice
  • 2 tablespoons agave nectar adjust to taste
  • 1 cup ice cubes
  • Coconut whipped cream for garnish optional
  • Pineapple wedges and maraschino cherries for garnish

Instructions
 

  • Add pineapple chunks, mango, coconut water, orange juice, lime juice, and agave nectar to a blender.
  • Blend until smooth and frothy.
  • Add ice and blend again until the mixture is slushy.
  • Taste and adjust sweetness if needed by adding more agave nectar.
  • Pour into glasses and top with a dollop of coconut whipped cream if desired.
  • Garnish with pineapple wedges and maraschino cherries.
  • Serve immediately and enjoy your tropical getaway in a glass!

Notes

For a creamier version, substitute half the coconut water with coconut milk.
Make it boozy (for non-vegan friends) by adding a splash of rum.
Freeze leftover mixture in popsicle molds for a refreshing treat!
